On tap right now is our Project Z. Why is it called that? It was made using apple from EZ Orchards. It’s a blend of French and British cider apples, that I fermented completely dry. You can notice some subtle similarities between our blend and EZ Orchards, but that being said, they are pretty different. A few reasons is that I used a Champagne yeast, and Kevin does no use added yeast at all. Also, my blend used a lot less varieties than his. We also use different fermentation methods, mine being quicker and warmer, and his taking much longer and at lower temps.
